Melon Mini Muffins
- 3 eggs
- 1-1/2 c. sugar
- 2 tsp. vanilla
- 3/4 c. veg. oil
- 3 c. shredded and strained cantaloupe & honeydew melons
- 10 oz. drained crushed pineapple
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 2 tsp. cinnamon
Beat eggs, oil, sugar & vanilla. Fold in fruit. Sift flour, baking soda, salt, baking powder & cinnamon. Add dry mixture to wet. Spoon batter into greased mini-muffin tins (or into mini baking papers in the tins). Bake for 10+/- minutes at 350*F. Makes 106.
Lime Cream Cheese Frosting
- 8 oz. cream cheese softened
- 1-2 c. powdered sugar
- Zest of two limes
- Juice of one lime
Cream the cream cheese and the powdered sugar together. Add lime zest and juice. Add more powdered sugar until desired consistency reached.
Putting it all together
- Carefully toast coconut on cookie sheet under broiler. Keep watch or it will burn.
- Frost melon muffins with lime frosting.
- Sprinkle with toasted coconut.
